And if there&#8217;s anything better, then it has to be at those huge family dinners, often over Christmas holidays, when  grandma whips up a delicacy like <em><a href=\"https:\/\/mulembenation.co.ke\/food\/simple-seveve-recipe-cook-traditional-luhya-delicacy-in-no-time\/\">seveve ga&#8217; amabere<\/a><\/em>,&nbsp;<a href=\"https:\/\/mulembenation.co.ke\/recipe\/simple-enyama-esike-recipe-tasty-traditional-luhya-meat-delicacy\/\">enyama esike<\/a>, <em>muduya<\/em> or<em> <a href=\"https:\/\/mulembenation.co.ke\/food\/tips-to-cheat-your-perfect-kienyeji-chicken-that-any-luhya-will-love\/\">engokho <\/a>ye<a href=\"https:\/\/mulembenation.co.ke\/how-to-make-munyu-kwa-lukhaye-a-traditional-luhya-salt-guaranteed-to-make-your-kienyeji-chicken-a-star\/\"> munyu kwa lukhaye<\/a>. <\/em><\/p>\n\n\n\n<p>I mention these <a href=\"https:\/\/mulembenation.co.ke\/food\/category\/traditional-luhya-vegetables\/\">Luhya traditional vegetables<\/a> and<a href=\"https:\/\/mulembenation.co.ke\/food\/category\/traditional-luhya-meat-dishes\/\"> meat delicacies<\/a> for obvious and not so obvious reasons. A luhya&#8217;s love of engoho is a well known, well chewed on, well satirized affair. But less known is muduya&#8217;s place among luhya traditional foods. Let me put it this way. Growing up, it&#8217;s only <a href=\"https:\/\/mulembenation.co.ke\/recipe\/tips-to-cheat-your-perfect-kienyeji-chicken-that-any-luhya-will-love\/\">ingokho<\/a> and muduya that was shared among brothers.<\/p>\n\n\n\n<p>They&#8217;d slaughter a cock, <a href=\"https:\/\/mulembenation.co.ke\/recipe\/tips-to-cheat-your-perfect-kienyeji-chicken-that-any-luhya-will-love\/\">stew it<\/a>, and then send us the children (my cousins, siblings and I ) to deliver the food and spread the love around the village. We would be dispatched with small servings to each house of the extended family:<em> isundi <\/em>and<em> shirenge<\/em> to baba <em>msakhulu<\/em> who lived across the river,<em> <a href=\"https:\/\/docplayer.net\/36857213-Safeguarding-intangible-cultural-heritage-traditional-foodways-of-the-isukha-community-of-kenya.html\">indangulu<\/a><\/em> and <em>ligoti<\/em> to <em>baba mtiiti<\/em> across the fence. With muduya, it was no different &#8211;  a bowl of steaming<em> muduya<\/em> here, there.<\/p>\n\n\n\n<!--WPRM Recipe 9786-->\n<div class=\"wprm-fallback-recipe\">\n\t<h2 class=\"wprm-fallback-recipe-name\">How to make muduya<\/h2>\n\t\t<p class=\"wprm-fallback-recipe-summary\">\n\t\t<p>Muduya is a bean stew delicacy that&#039;s treasured among the Maragoli sub-tribe of the Luhya of Western Kenya. It packs a punch in flavor, yet no spices are involved in its preparation. Muduya is best served with <a href=\"https:\/\/mulembenation.co.ke\/obusuma-vuchima-busuma-know-the-kenyan-staple-ugali-as-only-a-luhya-can\/\">ugali<\/a> and a side helping of fresh vegetables or vegetable salad. <\/p>\t<\/p>\n\t<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n\t<div class=\"wprm-fallback-recipe-ingredients\">\n\t\t<ul><li>250 millimeters Munyu Musherekha (A traditional lye made by leaching ash.  )<\/li><li>250 grams Split decorticated beans (Slightly roasted, split, decorticated dry beans of whichever variety. )<\/li><li>1-3 liters Water (Use most to boil the beans and hold some to be used during cooking.)<\/li><li>1 Pinch Salt (Or to taste.)<\/li><\/ul>\t<\/div>\n\t<div class=\"wprm-fallback-recipe-instructions\">\n\t\t<ol><li><p>Cook the split decorticated beans by bringing them to a boil. <\/p><\/li><li><p>Add the salt, munyu musherekha and stir continuously until it becomes a thick paste<\/p><\/li><\/ol><h4>&#039;Stewing&#039; of &#039;frying&#039; the muduya (optional)<\/h4><ol><li><p>Fry tomatoes and onions till soft in cooking oil of your choice. Add garlic, ginger or any other spices of your choice.  <\/p><\/li><li><p>Add the muduya and bring to a boil stirring along the way to avoid it sticking to the bottom of the pan. <\/p><\/li><\/ol>\t<\/div>\n\t<div class=\"wprm-fallback-recipe-notes\">\n\t\t<h3><span style=\"color: #000000\">Quick facts about omunyu musherekha<\/span><\/h3>\n<ul>\n<li><a href=\"https:\/\/mulembenation.co.ke\/everything-munyu-musherekha-make-munyu-cook-with-munyu-health-benefits-recipes\/\"><em>Munyu musherekha<\/em><\/a> is an acquired taste. Too much gives food a bitter alkaline taste.<\/li>\n<li>Too much is a function of both the quantities added, and the strength of the lye. To guesstimate the strength of lye, dip a finger in the solution and taste.<\/li>\n<li>A strong alkaline taste denotes strong <em>munyu musherekha<\/em>.<\/li>\n<li>The ash is commonly of the dry maize cob, sun-dried peels of the plantain or sun-dried bean stalks and pods. It is colloquially thought that the strength of lye increases down that scale.<\/li>\n<\/ul>\n<h3><span style=\"color: #000000\">How to prepare split, de-corticated beans for cooking muduya<\/span><\/h3>\n<ol>\n<li>Dry beans of whichever variety, are slightly wet with water.<\/li>\n<li>Then in a dry pan, roasted over a fire, being tossed periodically to avoid burning- much in the manner of how groundnuts are roasted.<\/li>\n<li>The bean&#8217;s testa is stripped of the bean by shearing action using the two-stone method that was traditionally used to grind seeds.
